Terrible Baby’s vibrant rooftop bar at Eaton HK unveils a new cocktail menu crafted by Bar Manager Axel Gonzalez, launching on March 5.
Thoughtfully conceived as a sensory journey, the menu draws on diverse ingredients and storytelling to showcase Hong Kong’s dynamic flavors and contemporary drinking culture, inviting guests to explore a new cocktail experience.
The newly designed menu introduces a clear tasting guide across five flavor pillars — umami-forward, sweet, sour, spicy and herbal. This intuitive compass of taste helps guests navigate the selection with ease, guiding them from fruit-forward expressions to more spirit-forward and boldly layered creations, and ultimately toward a cocktail that best suits their personal palate.
Among the four signature highlights is Dong Ling Cha (HK$98), inspired by beloved cha chaan teng iced drinks. Axel’s favorite citrus–grapefruit–is paired with cold brew-infused dark rum. The cocktail is finished with a sparkling twist on the classic Vitasoy Lemon Tea, resulting in a lively, fizzy cocktail that balances citrus brightness with gentle sweetness.
DDL Old Fashioned (HK$130) offers a rich, spirit-forward take inspired by Axel’s childhood mornings in Argentina. Michter’s Rye is fat-washed with rich, pastry-grade dulce de leche for a creamy texture, then finished with a raspberry bonbon from local confectioner, Conspiracy Chocolate, for a layered, nostalgic sweetness.
Ta-boo (HK$110) is a vibrant, tropical collaboration with Hong Kong’s leading kombucha brand, Taboocha. Blending Chivas Regal 12 Year whisky with passion fruit kombucha, turmeric and a lift of passion fruit cordial, this lightly fizzy cocktail offers a funky, refreshing finish with a subtle kick.
Calamansi All The Way (HK$110) features Two Moons Calamansi Gin from a local Hong Kong distillery in a crisp, sparkling serve. Bright and fruit-forward, it gains gentle roundness from honey and a clean, citrus-driven lift from fresh guava and calamansi. This effervescent and easy-to-drink cocktail pays homage to the beloved citrus flavors found in Southeast Asia.
